  • 2 ½ cups whole wheat pastry or spelt flour,
  • ¾ cup sugar
  • 1 ½ tablespoon baking powder
  • ¼ tablespoon salt
  • ¾ cup vegan margarine 
  • 1 tablespoon vanilla extract
  • ¼ cup orange juice from about 1 large orange

  • Apricot or peach all-fruit preserves
  • Strawberry preserves
  • Prune butter

Step By Step Instructions To Make Vegan Hamantaschen

Step1

food processor, combine 2 12 cups flour with sugar, baking powder, and salt. Mix well by pulsing on and off a few times.

Step2

Divide up the margarine into pieces and add the vanilla. Mix the flour and margarine together and pulse on and off until well mixed.

Step3

Using the feed tube, add the orange juice and run the motor until the mixture holds together.

Step4

Transfer the dough to a well-floured work surface. The dough needs to be soft, but not sticky. Add enough additional flour to make it less sticky, but not stiff.

Step5

For best results, wrap the dough in plastic wrap and refrigerate overnight for at least 2 hours.

Prepare the oven to 350°F when you are ready to make the cookies.

Roll the dough out evenly to about an 18-inch thickness on a well-floured board. Slice the dough into circles of 2 to 2 11.2 inches using a cookie cutter or the open end of a glass.

Combining scraps of dough until they are all gone, repeat with the remaining dough.

Make a triangle of dough with the filling inside, yet open at the bottom, by placing a teaspoon of filling at the centre of each circle of dough. You may need to pinch more than you think necessary, as they will expand while baking.
