FOR THE SOUP
- 2 chicken breasts, cubed
- 1 pound small to medium shrimp,
- 1 cup fresh spinach, torn into small pieces
- 1 cup mushroom, sliced
- 1 can water chestnuts
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine
- 1 tablespoon soy sauce
- 1 teaspoon finely chopped scallion
- 1 teaspoon finely chopped fresh ginger
- 6 cups chicken stock
FOR THE WONTONS
- 6 ounces ground pork
- 8 medium shrimp shelled and ground
- 1 teaspoon light brown sugar
- 1 tablespoon rice wine
- 1 tablespoon soy sauce
- 1 teaspoon finely chopped scallion
- 1 teaspoon finely chopped ginger
- 24 wonton wrappers
FOR THE SOUP
To make the soup, bring chicken stock to a rolling boil, then add the rest of the ingredients.
Cook for 10 minutes until chicken and shrimp are cooked through.
FOR THE WONTONS
Combine pork, ground shrimp, brown sugar, rice wine or sherry, soy sauce, scallions, and chopped ginger in a bowl.
Mix well and let stand for 25-30 minutes to blend flavors.
In the center of each wonton wrapper, place 1 tbsp of the filling.
With a little water, moisten the edges of each wonton and seal them with your fingers. Then fold each wonton in half.
For cooking, add wontons to boiling chicken stock and cook for 4-5 minutes.
Put the soup in individual bowls and serve.
- Use fresh ingredients: Fresh ingredients always taste better and make the soup more flavorful. Make sure to use fresh chicken breasts, shrimp, spinach, mushrooms, scallions, and ginger.
- Choose good quality chicken stock: The chicken stock is the base of the soup, so choose a good quality one that is rich in flavor. You can also make your own chicken stock from scratch for a more authentic taste.
- Marinate the filling: Marinating the pork and shrimp filling for at least 25-30 minutes will help to infuse the flavors and make it more delicious.
- Use a small amount of filling: It's important not to overfill the wontons, as it can cause them to burst open while cooking. Use a tablespoon of filling for each wonton.
- Seal the edges properly: To prevent the wontons from falling apart while cooking, make sure to seal the edges properly. Use a little water to moisten the edges and press them firmly with your fingers.
- Cook the wontons separately: It's best to cook the wontons separately in boiling water and then add them to the soup, as it helps to prevent them from breaking apart.
- Add the spinach at the end: To retain the fresh green color and texture of the spinach, add it to the soup in the last few minutes of cooking.
- Adjust the seasoning: Taste the soup and adjust the seasoning according to your preference. You can add more soy sauce, rice wine, or brown sugar to balance the flavors.
- Serve hot: Serve the soup hot and garnish it with chopped scallions, if desired. Enjoy!
