Vegan Pizzelle Recipe

- 9 tablespoons liquid egg substitute (We use Just Egg)
- 3/4 cup sugar
- 1/2 cup vegan butter, melted
- 1 tablespoon vanilla extract
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- Pinch of salt
- 1 teaspoon crushed star anise
- powdered sugar, for dusting
Using a hand mixer or whisk, beat sugar and liquid egg substitute together in a medium mixing bowl. Continue mixing after adding the melted vegan butter and vanilla.
Sift your dry ingredients into the wet mixture using a sifter or mesh strainer. Using a hand mixer, mix the ingredients until they form a thick batter. Incorporate star anise into the mixture.
Warm up your pizzelle maker by turning it on. Pizzelle makers vary in their settings, but we like to stay around setting 3.
Close the pizzelle press after loading the batter into each mold with a tablespoon.
Depending on how crispy you like them, you can cook them for 30-60 seconds.
Place them on a cooling rack to cool completely after being removed from the press.
When completely cool, dust with powdered sugar and serve.
