Ingredients
  

For the Egg Rolls:

  • 1/2 cup Sun-dried tomatoes
  • 4 Avocados, chopped
  • 1/4 cup Cilantro minced
  • 1/3 cup Diced red onion
  • 1 tablespoon Lime juice
  • 1 teaspoon Salt
  • 20 Egg roll wrappers
  • Vegetable oil, for frying

For the Tamarind Cashew Sauce:

  • 4 teaspoons White vinegar
  • 1 teaspoon  Balsamic vinegar
  • 1 teaspoon Lime juice
  • 1 tablespoon Sugar
  • 1 teaspoon Tamarind concentrate
  • 1/4  teaspoon Ground turmeric
  • 1 teaspoon Cumin
  • 2 Green onions
  • 2 Cloves garlic
  • 1/2 cup Cashews
  • 2/3 cup Fresh cilantro leaves
  • 1/2 teaspoon Freshly ground black pepper
  • 1/2 teaspoon Salt

Instructions
 

Get Ingredients Ready:

  • Cut sun-dried tomatoes. Mix avocado, onion, cilantro, salt, and lime juice.

Make Egg Rolls:

  • Put the corner on the egg roll wrapper's outside.
  • Add 1-2 spoons of filling. Close it with water.
  • Fold the corner tightly over the filling.
  • Roll it in the same way, and fold the side corners in.
  • Roll until it's closed. Place on parchment paper.
  • Repeat until you use all the filling.

Cooking Egg Rolls:

  • Heat oil to 350°F in a 2-inch pot.
  • Fry rolls in groups of three or four for 3-4 minutes.
  • Let them drain on paper towels.

Get Sauce Ready:

  • Blend sauce ingredients in a blender or food processor.

Serve:

  • Enjoy your hot egg rolls with the sauce.

Notes

To make them perfect, make sure your avocado is just right, and don't stuff too much into the egg roll wrappers. Cook them until they're golden and crispy.
