  • 2 tablespoon  Extra-Virgin Olive Oil
  • 1 Medium Sweet Onion
  • 4 Garlic Cloves
  • 1 Red Bell Pepper
  • 1 Fresno Chile Pepper
  • 1 Anaheim Chile Pepper
  • 1/2 Pound Beef Chuck Roast (Cubed)
  • 1/2 Pound Ground Beef
  • 2 tablespoon All-purpose Flour
  • 3 tablespoon Chili Powder
  • 2 tablespoon Cumin Powder
  • 1/2 tablespoon Black Pepper
  • 1/2 tablespoon  Cayenne Pepper
  • 12 Ounce Mexican Beer
  • 1/2 quarts Beef Stock  
  • 1 tablespoon Kosher Salt
  • 1/4 cup Cilantro =  

Instructions
 

  • Toast dried chiles for 2 minutes on medium-high heat.
  • Steam toasted chiles in hot water for 15 minutes, then make a smooth paste.
  • Heat the stove to medium-high; cook onions, garlic, and peppers for 7 minutes until they look clear.
  • Put in cubed beef and ground beef; cook for 8 minutes until they turn brown.
  • Add seasonings and flour; cook for 2 minutes until it smells great.
  • Mix in the paste, beef stock, and salt; make it boil.
  • Lower the heat, partly cover it, and let it simmer for at least 2 hours.
