  • 48 extra small oysters (shucked)
  • 1 cup flour
  • 1 tbsp Cajun seasoning, (or as desired)
  • 2/3 cup canola oil (for frying)

Instructions
 

  • In a mixing bowl, thoroughly combine the flour and Cajun seasoning to achieve the desired flavor profile, adjusting the quantity according to personal preference.
  • Heat the oil in a deep pan over medium-high heat to ensure proper frying conditions.
  • While the oil is reaching the optimal temperature, coat each oyster generously with the flour mixture, ensuring an even coating and gently removing any excess flour.
  • Once the oil is sufficiently hot, carefully add the oysters to the pan in batches, taking care not to overcrowd the pan, and cook until the edges become beautifully browned and delicately curled. Rotate the oysters to ensure even cooking on all sides.
  • Once cooked to perfection, transfer the oysters to a plate lined with paper towels to allow any excess oil to drain. Serve promptly while still hot, accompanied by tartar sauce and lemon wedges for a delightful flavor combination.
