To prepare the Boom Boom Sauce, combine the mayonnaise, honey, sweet chilli sauce and hot sauce in a medium bowl.
Next, add buttermilk, egg, salt and pepper to the mixture. Gradually add the cornstarch and flour, making sure to incorporate completely. Sit on one side.
Place the bread crumbs in a shallow bowl, reserving them for coating the chicken.
In a medium saucepan or skillet, heat the oil over medium-high heat until it reaches a temperature of 375°F (190°C).
Pat the chicken dry with a paper towel to remove any excess moisture. Dip each piece in the sauce, letting it drip off, and then roll it in the breadcrumbs until evenly coated. Fry the chicken in hot oil for about 1 to 2 minutes or until it turns golden brown. (Roast the chicken in batches of up to twelve pieces to prevent overcrowding.)
Transfer the cooked chicken to a wire rack to cool slightly.
