Lime Pickles Recipe

In this blog, I will share with you a lime pickles recipe that is extremely delicious.

Ingredients
  

  • 7 pounds Cucumbers (sliced thick)
  • 2 gallons Water
  • 2 cups Powdered Lime (for pickling)
  • 1/2 tsp Alum
  • 1 tbsp Salt
  • 4 1/2 (pounds) Sugar 
  • 2 quarts Vinegar (5% acidity)
  • 1 tsp Celery seed
  • 1 tsp Mustard Seed
  • 1 tbsp Mixed pickling spice
  • Green food colouring (optional) 

Instructions
 

  • To prepare the pickles, begin by combining sliced cucumbers, water, and lime in a refrigerator-safe container. Allow the mixture to rest in the refrigerator for a full day.
  • After 24 hours, drain the cucumber mixture and rinse the cucumber slices thoroughly three times. Next, immerse the cucumber slices in clear water and add half a teaspoon of alum. Allow the cucumbers to soak in the water and alum mixture for three hours, then drain the mixture.
  • In a separate container, prepare a mixture using the remaining ingredients, excluding the food colouring. If needed, heat the mixture slightly to dissolve the sugar. Place the cucumbers in the mixture, ensuring they are fully submerged. Allow the cucumbers to soak in the mixture overnight.
  • The following day, add green food colouring as desired to achieve the desired colour. Boil the cucumber mixture for 35 minutes.
  • Transfer the pickles into jars, making sure to seal them tightly. Finally, process the jars in a water bath canner for 10 minutes (for pint jars).

Notes

  • When slicing cucumbers, aim for a thickness of around 1/4 inch to ensure the pickling solution is absorbed evenly.
  • Always use powdered lime for pickling, not fresh lime juice. Powdered lime is a type of calcium hydroxide that helps to firm up the cucumbers and preserve their texture.
  • Rinse the cucumbers thoroughly after the initial soaking to remove any excess lime flavour and to ensure they are clean.
  • Soaking the cucumbers in alum water helps to keep them crispy during the pickling process.
  • For best results, let the cucumbers soak in the pickling solution for at least 24 hours before boiling and canning.
  • Use green food colouring if you want the pickles to have a vibrant green colour.
  • Always process the jars in a water bath canner to ensure they are properly sealed and safe for long-term storage.
