Cuisine American
- 2 ounces Soft butter
- 1 pound Triggerfish
- 1 tablespoon Salt
- 1 tablespoon Freshly ground pepper
- 2 ounces White wine
- 1 medium Shallots minced
- 1 tablespoon Fresh lemon juice
- 2 teaspoons Drained Capers
- Cholula Hot Sauce
Melt butter in a sauté pan over medium heat. Season the fish with salt and pepper.
Once the butter has melted and is foaming, add the fillet to the pan and sauté until lightly golden brown.
Flip the fish and continue sautéing until the fillet is fully cooked, which should take approximately 8-10 minutes.
Transfer the fish to a platter and keep it warm. Reduce the heat to low, and add wine and shallots to the pan, stirring slowly but constantly with a wooden spoon for approximately 2 minutes.
Then add lemon juice and capers and continue stirring until the mixture thickens into a sauce-like consistency.
Drizzle the sauce over the fish and serve.
