Ingredients
  

  • 12 cups  popped popcorn
  • 2 cups  salted, dry-roasted peanuts
  • 1/2 cup  butter
  • 1 cup  packed light brown sugar
  • 1/3 cup  corn syrup
  • 1/4 teaspoon  salt
  • 1 teaspoon  vanilla extract
  • 1/2 teaspoon  baking soda

Instructions
 

  • To prepare the butter toffee popcorn, begin by preheating the oven to 250 degrees Fahrenheit. Next, in a large bowl, combine the popcorn and nuts, and set it aside.
  • Using a saucepan, heat the butter, brown sugar, corn syrup, and salt over medium-high heat, stirring frequently until it reaches a boil. Allow the mixture to boil for three minutes before removing it from the heat. Stir in the vanilla and baking soda until they are thoroughly combined.
  • Pour the prepared brown sugar mixture over the popcorn and nut mixture, and toss it until the mixture is completely coated. Spread the coated mixture onto a large, rimmed baking sheet.
  • Bake the mixture in the preheated oven for an hour, stirring every 15 minutes to ensure that the mixture is evenly baked. Once done, remove it from the oven and let it cool completely. After it has cooled, it's ready to be served or stored in an airtight container.

Notes

  • Use air-popped popcorn for a healthier option, or use store-bought popcorn if you're short on time.
  • Dry-roasted peanuts are a great addition to this recipe, but you can substitute them with your favorite nut, such as almonds or cashews.
  • Use a heavy-bottomed saucepan to make the toffee mixture. This will help prevent the mixture from burning and sticking to the bottom of the pan.
  • Be sure to stir the toffee mixture constantly while it's boiling to ensure that it doesn't burn or crystallize.
  • Spread the coated popcorn and nut mixture onto a large baking sheet with raised edges to prevent the mixture from spilling over.
  • Stir the mixture every 15 minutes while it's baking to ensure that it's evenly cooked.
  • Let the popcorn cool completely before storing it in an airtight container to prevent it from becoming stale.
