For The Cake:
- 3 large eggs separated
- 1 1⁄2 cups sugar
- 1 1⁄2 cups cake flour
- 3⁄4 teaspoon baking soda
- 3⁄4 teaspoon salt
- 1⁄2 cup unsweetened cocoa
- 1⁄2 cup vegetable oil
- 1 cup milk
For The Frosting:
- 1 1⁄2 cups water
- 1 cup sugar
- 1⁄4 teaspoon salt
- 1⁄4 cup butter
- 1⁄2 cup unsweetened cocoa
- 1⁄2 cup cornstarch
- 1⁄2 cup water
For The Cake:
To begin, preheat the oven to 350°F and prepare two 8-inch round pans by lining them with parchment or waxed paper.
Next, beat the egg whites until frothy and gradually beat in 1/2 cup of sugar until stiff peaks form.
Sift the dry ingredients together and create a well in the flour mixture.
Add the vegetable oil and half of the milk, and beat the mixture until well blended at medium speed.
Then, add the remaining milk and egg yolks and beat until smooth.
Fold in the beaten egg whites and pour the batter into the prepared pans. Bake for 30-35 minutes until done, and cool the cakes before slicing each layer in half horizontally to create four layers.
Finally, frost the layers with Dobash frosting.
For The Frosting:
combine the first four ingredients and bring the mixture to a boil.
Sift the cocoa and cornstarch together to remove any lumps, and combine them with the remaining 1/2 cup of water.
Add the mixture to the boiling mixture, bring it to a boil again, and cool it slightly before frosting.
Be careful not to let it cool too much, or it will set in the pot.
This frosting is known for its smooth texture, and once it sets, it cannot be easily damaged.
