Ingredients
  

  • 2 tablespoons butter
  • 2 medium potatoes, peeled
  • 1 medium onion, chopped
  • 6 cups coarsely chopped cabbage
  • 1/2 cup chicken broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Begin by preparing the potatoes. Cut them in half lengthwise and then slice them widthwise into thin 1/8-inch slices.
  • Heat a large skillet over medium heat and melt the butter in it. Once the butter has melted, add the sliced potatoes and onions. Cook and stir the mixture until the potatoes become tender, which should take around 10-12 minutes.
  • Once the potatoes are cooked, transfer them to a bowl and keep them warm.
  • In the same skillet, add the cabbage and broth. Bring the mixture to a boil and then reduce the heat to a simmer. Cover the skillet and cook until the cabbage becomes tender, which should take around 8-10 minutes.
  • Once the cabbage has cooked, remove the lid from the skillet and let it simmer uncovered until most of the liquid has evaporated.
  • Stir in the cooked potato mixture and season with salt and pepper.

Notes

  • To save time, you can slice the potatoes in advance and store them in a container of water in the fridge until you're ready to cook them.
  • Make sure to chop the cabbage into coarse pieces to ensure even cooking.
  • You can substitute chicken broth with vegetable broth or water for a vegetarian version.
  • For added flavor, you can add garlic, bacon, or smoked sausage to the recipe.
  • If you prefer a crispier texture, you can cook the potatoes and cabbage separately and then combine them at the end.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stovetop.
