- 3 chicken breast halves, cubed
- 1 can Rotel
- 1 bag tortilla chips
- 1 can cream of chicken soup
- 1 small can chopped green chiles
- 1 pound shredded cheddar cheese
Preheat the oven to 350 degrees Fahrenheit. Cook the chicken until fully cooked and dice it into small pieces. In a mixing bowl, combine the Rotel, soup, green chiles, and cheese.
Microwave the mixture on high for approximately 1 1/2 minutes, or until the cheese is melted. Add the diced chicken to the mixture and stir to combine.
In a casserole dish, create alternating layers of tortilla chips and cheese mixture, starting with half of each. Repeat the process with the remaining chips and cheese mixture. Sprinkle some crushed tortilla chips on top of the casserole.
Place the casserole in the preheated oven and bake for approximately 20 minutes or until it is thoroughly heated and the top is golden brown with a bubbly appearance. Serve hot.
