- 8 (ounces ) cream cheese softened
- 3.4 (ounces) instant cheesecake pudding mix, unprepared
- 1/4 cup liquid vanilla coffee creamer
- 2 (pounds) strawberries, hulled and sliced
- 3 medium bananas, sliced into coins
- 2 tablespoons fresh lemon juice
In a medium bowl, use an electric mixer set to medium-high speed to beat cream cheese until smooth, even if it initially binds up in the beaters. Add dry pudding mix and mix until thoroughly combined.
While continuously mixing at medium-low speed, gradually add creamer to the cream cheese mixture, about one tablespoon at a time. After adding all the creamer, turn the mixer speed to high and beat until the mixture becomes smooth.
In a large bowl, combine sliced strawberries, banana coins, and lemon juice. Mix until the fruit is coated with the lemon juice. Add the cheesecake mixture to the bowl and gently fold it into the fruit using a mixing spatula or spoon.
Chill the mixture until ready to serve or serve immediately.
