Ingredients
  

  • 1 large  tomato
  • 1/4 cup  breadcrumbs with Italian seasoning
  • 1/4 cup  panko breadcrumbs
  • 1/4 cup  gruyere shredded
  • 1 clove  garlic minced
  • 1 tablespoon  olive oil
  • 1/2 teaspoon  soy sauce
  • 1/2 teaspoon  balsamic vinegar
  • 1 teaspoon  olive oil

Instructions
 

  • Preheat the oven to 350 degrees F (175 degrees C). In a mixing bowl, combine the breadcrumbs, panko, gruyere cheese, and garlic, and stir well to incorporate the ingredients.
  • In a separate bowl, whisk together the soy sauce, balsamic vinegar, and 1 teaspoon of olive oil until thoroughly combined.
  • Slice the tomatoes into 1/4 to 1/2-inch-thick rounds.
  • Brush the soy sauce mixture generously over both sides of each tomato slice. Sprinkle salt and pepper to taste, then dip the slices into the breadcrumb mixture, coating both sides evenly.
  • Lightly grease a baking sheet with cooking spray or oil, and arrange the tomato slices in a single layer. Drizzle 1 tablespoon of olive oil evenly over the top of the tomatoes.
  • Bake the tomatoes in the preheated oven for 15 to 20 minutes, until they are tender and the breadcrumb coating is golden brown. Turn on the broiler for the last few minutes to lightly brown the tops. Remove from the oven and serve immediately.

Tips And Tricks:

  • Choose ripe tomatoes: The key to making delicious breaded tomatoes is to use ripe, juicy tomatoes. Look for tomatoes that are firm but yield slightly to the touch and have a bright red colour.
  • Use a mix of breadcrumbs: Combining both regular breadcrumbs and panko breadcrumbs in the recipe will give the coating a nice texture and crunch.
  • Season the breadcrumbs: Adding Italian seasoning to the breadcrumbs will give the dish a flavorful boost.
  • Don't skip the soy sauce and balsamic vinegar: This simple marinade adds a savoury and tangy flavour to the tomatoes.
  • Dip evenly: Make sure to coat the tomato slices evenly with the breadcrumb mixture to ensure even browning and flavour.
  • Use cooking spray: To prevent the tomatoes from sticking to the baking sheet, lightly grease it with cooking spray or oil.
  • Broil for a crispy top: Turning on the broiler for the last few minutes of baking will give the top of the breaded tomatoes a nice golden brown colour and crispy texture.
