Ingredients
  

  • 1 1⁄2 C sifted  flour
  • 1⁄2 C sugar 
  • 2 tsp baking powder 
  • 1⁄2 tsp salt 
  • 1⁄4 C shortening 
  • 1 egg
  • 1⁄2 C milk
  • 1 C blueberries

Instructions
 

  • Preheat the oven to 400 F.
  • Sift the flour, sugar, baking powder, and salt together in a separate bowl.
  • In another bowl, combine the shortening, egg, and milk.
  • Incorporate the wet ingredients into the dry ingredients.
  • Gently fold in the blueberries, being mindful not to crush them too much, as their juices will create a lovely color swirl.
  • Bake the mixture at 400 F for 20-25 minutes, or until lightly golden in color.

Notes

  • Make sure to sift the dry ingredients together to ensure a smooth and evenly distributed batter.
  • Use a light hand when folding in the blueberries to prevent them from getting crushed and turning the batter blue.
  • To make the muffins moister, you can substitute some or all of the shortening with butter.
  • For an extra burst of flavor, add some lemon zest or vanilla extract to the batter.
  • Fill the muffin cups about two-thirds full to ensure that the muffins rise properly and don't overflow.
  • To check if the muffins are done, insert a toothpick into the center of one muffin - if it comes out clean, they are ready.
  • Let the muffins cool for a few minutes in the pan before removing them to prevent them from falling apart.
