Course Dessert
Cuisine American
- 1 1⁄2 C sifted flour
- 1⁄2 C sugar
- 2 tsp baking powder
- 1⁄2 tsp salt
- 1⁄4 C shortening
- 1 egg
- 1⁄2 C milk
- 1 C blueberries
Preheat the oven to 400 F.
Sift the flour, sugar, baking powder, and salt together in a separate bowl.
In another bowl, combine the shortening, egg, and milk.
Incorporate the wet ingredients into the dry ingredients.
Gently fold in the blueberries, being mindful not to crush them too much, as their juices will create a lovely color swirl.
Bake the mixture at 400 F for 20-25 minutes, or until lightly golden in color.
- Make sure to sift the dry ingredients together to ensure a smooth and evenly distributed batter.
- Use a light hand when folding in the blueberries to prevent them from getting crushed and turning the batter blue.
- To make the muffins moister, you can substitute some or all of the shortening with butter.
- For an extra burst of flavor, add some lemon zest or vanilla extract to the batter.
- Fill the muffin cups about two-thirds full to ensure that the muffins rise properly and don't overflow.
- To check if the muffins are done, insert a toothpick into the center of one muffin - if it comes out clean, they are ready.
- Let the muffins cool for a few minutes in the pan before removing them to prevent them from falling apart.
