Preheat oven to 425°F with racks in middle and upper positions.
Prepare a 13- x 9-inch baking dish by mixing potatoes, olive oil, and 1 tablespoon of Creole seasoning.
In a preheated oven, bake potatoes for 30 to 35 minutes, stirring halfway through.
In the meantime, combine the chicken, yogurt, salt, and the remaining 1 tablespoon of Creole seasoning in a large bowl. While the potatoes are cooking, chill the chicken mixture.
Remove the baking dish from the oven once the potatoes are fully cooked. In a baking dish with potatoes, combine the chicken mixture, bell pepper, and onion; toss to combine. Return to the oven; bake until the chicken is cooked through, 30 to 35 minutes. Remove from the oven; turn the oven to broil.
Add cheese, bacon, and scallions evenly to the potato and chicken mixture. On top of the oven, broil for 2 minutes until the cheese is melted and bubbly. You may serve these with sour cream and hot sauce if you like.
