Preheat the oven to 400°F (200°C).
Heat olive oil or butter over medium heat in a large pan.
After 1 minute, add minced garlic cloves and stir until soft and fragrant (but not brown).
About 2-3 minutes later, add the chopped shrimp and cook, stirring frequently, until just opaque.
After the heat has been turned off, stir in the cream cheese and spinach, until everything is well coated, and then add the New Bae seasoning. If necessary, adjust the seasonings.
Using parchment paper or a sheet pan sprayed with oil, arrange salmon fillets skin side down.
Then pat it dry. In order to stuff the shrimp mixture inside, make a 1/2" slit down the middle.
Using salt and pepper, season the fillet and spoon the mixture inside the slit. Allow it to spill out a bit.
Cook fillets for 15-18 minutes at 400F after topping with panko.
There should be a slight browning on the top of the panko. If desired, garnish with parsley.
