In a medium bowl, combine the flour, baking powder, and sugar.
Add almond milk, lemon juice, and vanilla extract to a second bowl and whisk together.
Blend the wet and dry ingredients together, making sure there are no clumps within the batter. Place in the for 10-15 minutes to set.
Using a large pot with the smallest circumference, heat the oil. It will spread to the width of the pot when you put the batter in the oil.
Regardless, the edges will fall off. If you have a wide but deep pot, you might find it good to work with it.
Use a large ketchup bottle or funnel to place the batter. Make the tip as wide as possible.
Fill the funnel cake with batter and squirt it into the hot oil, but concentrate on the middle so it stays together. The pieces will form together as they cook, so don't worry if they look a little sloppy.
On each side, cool for 2-3 minutes or until golden brown. The colour will tell you when it's ready, as will whether or not it holds together when flipped.
Place drained funnel cake on paper towels after removing it with a metal skimmer or metal spatula. Sprinkle powdered sugar over the top and serve.
