Ingredients
  

  • 1 cup oat flour
  • ½ cup vanilla protein powder
  • ¼ cup mini chocolate chips
  • 3 tbsp almond butter
  • 3 tbsp honey or maple syrup
  • 1 tsp peppermint extract
  • 2 –4 tbsp milk as needed
  • A few drops natural green food color optional
  • Pinch of salt

Instructions
 

Mix dry ingredients

  • Add oat flour, protein powder, chocolate chips, and salt into a bowl. Stir until everything looks even and well combined inside.

Add almond butter

  • Spoon almond butter into the dry mix. Stir carefully until small soft lumps start forming across the mixture evenly.

Add sweetener and mint

  • Pour honey and peppermint extract inside the bowl. Mix slowly until the dough begins to smell fresh and minty.

Add food color

  • Add one or two drops of green color. Mix until the dough turns soft mint green with a smooth texture.

Add milk as needed

  • Add milk one spoon at a time. Mix until dough becomes soft enough to roll into smooth round balls easily.

Shape the balls

  • Take small portions of dough and roll into balls. Place each ball gently on parchment paper to avoid sticking during chilling.

Chill the balls

  • Put the tray in the fridge for 20 minutes. Let the balls firm up so they taste perfect and hold their shape.

Notes

  • Use peppermint extract, not mint extract, for cleaner flavor.
  • Add more chocolate chips for extra crunch.
  • If dough is sticky, add extra oat flour.
  • If dough is dry, add more milk.
  • Store in a sealed box for five days in the fridge.
