Ingredients

  • Soy sauce – ½ cup
  • Mirin – ½ cup
  • Sugar – ¼ cup
  • Optional: Rice vinegar – 1 teaspoon
  • Optional: Cornstarch slurry ½ teaspoon cornstarch + 1 teaspoon water

Instructions

Mix the Ingredients

  • Add soy sauce, mirin, and sugar to a small saucepan and stir well to combine everything.

Heat the Mixture

  • Place the saucepan on medium heat and let the sauce slowly warm until the sugar starts melting.

Stir While Cooking

  • Stir the sauce often to avoid burning, and allow the flavors to blend smoothly as it simmers.

Let It Reduce

  • Cook the sauce for several minutes until it thickens and becomes glossy like syrup.

Adjust the Thickness

  • If you want thicker sauce, add cornstarch slurry and stir until silky and slightly sticky.

Add Optional Flavor

  • For extra brightness, add a small amount of rice vinegar for a slightly tangy flavor boost.

Cool Before Serving

  • Turn off the heat and let the sauce cool completely before using or storing in a jar.

Notes

  • Use low heat to avoid burning the sugar.
  • Stir often for a smooth and glossy sauce texture.
  • Add cornstarch only if you prefer extra-thick sauce.
  • Store in the fridge for up to two weeks.
  • Use clean, dry spoons when taking sauce from the jar.
