Ingredients

  • Pork loin – 500g
  • Soy sauce – 3 tbsp
  • Fish sauce – 1 tbsp
  • Honey – 2 tbsp
  • Brown sugar – 1 tbsp
  • Garlic paste – 1 tsp
  • White pepper – ½ tsp
  • Chili flakes – ½ tsp
  • Sesame seeds – 1 tsp optional

Instructions

  • Slice the Pork
  • Cut the pork into thin long strips. Keep the thickness even for better cooking and texture.
  • Prepare the Marinade
  • Mix soy sauce, fish sauce, honey, sugar, garlic paste, pepper, and chili flakes until fully combined.
  • Coat the Pork Well
  • Add pork strips to the marinade and mix well. Make sure every piece is covered completely.
  • Rest the Pork
  • Let the pork rest for at least one hour. This helps the meat soak up all flavors deeply.
  • Preheat Your Cooking Tool
  • Preheat your air fryer or oven to medium-high heat. This step ensures even cooking texture.
  • Arrange the Pork
  • Place pork strips on a tray in a single layer. Do not overlap or they will not cook evenly.
  • Start Cooking
  • Cook for 20 minutes, then flip the pork pieces. This step helps both sides turn golden and firm.
  • Cook Until Dry
  • Continue cooking until the pork looks dry outside but still soft inside. Do not let it burn.
  • Add Extra Crunch
  • For a crispier finish, cook for three extra minutes. Watch closely to avoid overcooking the strips.
  • Cool and Serve
  • Let the jerky cool fully before serving. The texture becomes firmer and more enjoyable as it cools.

Notes

  • Slice pork thin for faster and more even drying.
  • Chill pork before slicing for better cutting control.
  • Add extra chili flakes for a spicier flavor.
  • Use honey instead of sugar for a glossy finish.
  • Store jerky in an airtight container for long freshness.
