- 2 cups cooked chickpeas or 1 can, drained & rinsed
- 2 tbsp olive oil
- 1 medium onion finely chopped
- 3 garlic cloves minced
- 1- inch ginger grated
- 2 medium tomatoes chopped
- 1 cup coconut milk or cream
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- ½ tsp red chili powder optional
- Salt to taste
- Fresh cilantro chopped (for garnish)
Heat oil in a pot over medium heat.
Add cumin seeds and let them pop.
Add onions and cook until golden.
Stir in garlic and ginger; cook 1 minute.
Add tomatoes and cook until soft.
Mix in turmeric, coriander, and chili powder.
Stir well until spices smell fragrant.
Add chickpeas and coat with spices.
Pour in coconut milk and stir well.
Cook for 10 minutes until thick.
Add garam masala and mix gently.
Taste and add more salt if needed.
Garnish with fresh cilantro.
